What happens to the layers in my TIFF file?

They are flattened, permanently, into one composited image. Blend modes, masks, adjustment layers and editable text are all resolved into final pixels because JFIF has no structure to hold them. Keep the TIFF as the working master and treat the JFIF strictly as an export. TIFF handles CMYK, 16-bit depth, embedded ICC profiles and multi-page documents, which is exactly what print and archival workflows require. The .jfif extension confuses Windows and many web apps into refusing the file, which is usually the only reason anyone converts it.
Will transparency survive converting TIFF to JFIF?

No — JFIF has no alpha channel, so transparent regions are composited against a background colour, white unless you change it. That is the single most common surprise in this conversion: a logo that looked clean on a dark page arrives with a white box around it. Set the matte colour to match wherever the image will sit, or choose a target that keeps alpha.
How much quality will I lose going from TIFF to JFIF?

Will my CMYK colour survive the conversion to JFIF?

It is converted to sRGB, because JFIF has no CMYK mode. For screen use that is exactly what you want. For commercial print it is not — the gamut shift changes how saturated colours reproduce on press, so send the printer the original TIFF rather than the JFIF.
Does the JFIF keep the EXIF data from my TIFF?

By default yes, wherever the target has somewhere to put it — camera model, exposure settings, lens and GPS coordinates all carry across. GPS is the field worth thinking about: if the image is going to be published, use the strip-metadata option so you are not broadcasting where the photo was taken. TIFF is the Tagged Image File Format from 1986, and it is the format scanning, publishing and archiving industries standardised on.
Does TIFF to JFIF conversion preserve transparency?

Transparency survives when JFIF is PNG, WebP, TIFF, GIF, or SVG. Converting to JPG flattens the alpha channel against a white background.
