What exactly survives when ODT becomes MD?

The words, and nothing else. MD stores characters and line breaks, so bold, italics, headings, fonts, colours, tables, images, headers and footers are all discarded — not degraded, removed. That is the correct outcome when you want the text for indexing, diffing or scripting, and the wrong one if the formatting carried meaning. Markdown is the lingua franca of documentation, README files, static site generators and note-taking apps, and it diffs cleanly in git. Markdown has no single standard, so tables, footnotes and embedded HTML behave differently between CommonMark, GFM and everything else.

Which Markdown dialect does this conversion use?

CommonMark plus the GitHub Flavored Markdown extensions, which is the combination almost every current tool understands. That matters because Markdown was never standardised in one place: tables, footnotes, strikethrough and raw HTML behave differently between dialects, and those are exactly the constructs that silently change meaning when a document moves between renderers.

How faithful is the round-trip between OpenDocument and Microsoft formats?

Body text, headings, lists and simple tables move across cleanly in both directions. The known casualties are the same ones LibreOffice has always had: tracked changes, comments anchored to ranges, footnote numbering schemes and nested table borders. Check those specifically rather than assuming the whole document made it.

Will the MD open directly in a browser?

Yes, and the ODT would not have. Browsers ship a decoder for MD and none for ODT, so an ODT link forces a download while an MD renders inline. That is usually the deciding factor when the file is going onto a web page rather than into an application.

Is the ODT to MD converter free?
