How do I convert M4A audio to AIFF without losing quality?

Lossless AIFF (WAV / FLAC / ALAC) preserves every sample bit-identically; lossy AIFF (MP3 / AAC / OGG / Opus) defaults to 192 kbps which is transparent for most ears. An M4A holds AAC in most cases, or Apple Lossless (ALAC) when it came from a lossless rip. AIFF stores uncompressed big-endian PCM — the Apple-side equivalent of WAV, with the same bit-for-bit fidelity.
No, and it is worth being blunt: nothing can. The M4A already discarded detail during its original encode, and wrapping what remains in a lossless AIFF preserves exactly that — no more. The file gets several times larger and sounds identical. It is still the right move before editing, because AIFF will not add a second generation of artefacts when you export. AIFF is the studio interchange format on macOS, handles metadata better than plain WAV, and imports into Logic and Pro Tools instantly. M4A hides two very different things behind one extension — lossy AAC and lossless ALAC — and non-Apple hardware support is inconsistent.
DRM. A subset of M4A files are encrypted by the store or the software that issued them, and encrypted audio cannot be decoded by any converter. Anything you ripped yourself, recorded, or bought without protection converts normally; a licensed purchase will not.
Often not. M4A is decoded by essentially everything, including car head units and elderly players; AIFF needs software that knows the codec, which standalone hardware frequently does not have. If the destination is a car stereo or a portable player, that is a strong argument for staying on M4A. AIFF is as large as WAV with worse support outside the Apple world, so it is a poor choice for distribution.
Default is 192 kbps for lossy AIFF; pass-through for lossless AIFF. Override to 320 kbps for audiophile or 96 kbps for voice / podcast. The choice trades file size against audible fidelity; below 96 kbps lossy artifacts become noticeable on music.
If M4A is lossy and AIFF is lossless (e.g. MP3 → WAV), the AIFF is no better than the M4A — you cannot recover information already discarded. If M4A is lossless and AIFF is lossy, the AIFF codec recompresses; at 192 kbps the result is transparent for most content.
